Easter Lemon Drizzle Cake

340g self raising flour
6 tbsp milk
255g sugar
4 eggs beaten
Zest of 2 lemons
255g butter
3 tsp baking powder


1. Heat oven to 170C/gas mark 4
2. Mix together all ingredients, put in a lined tray, bake for 30-40 mins, until knife comes out clean
3. Squeeze juice from the 2 lemons and heat for 20 seconds in microwave, add a little icing sugar to thicken.
Prick cake with fork and pour warm lemon juice mixture over surface.
4. Enjoy with a cuppa!
