Mint tea is served all day long, after every meal and with every conversation. To make delicious Moroccan mint tea combine green tea, fresh mint and sugar in the tea pot and fill with boiling water. Leave to brew for a few minutes whilst setting out the Moroccan tea glasses. For a nice foam on the tea always pour with the tea pot a high distance above the glasses then garnish with sprigs of fresh mint.
Traditionally the tea is served three times and the amount of time it has been steeping gives each of the three glasses a unique flavour described in this famous proverb:
'The first glass is as gentle as life, the second glass is as strong as love, the third glass is as bitter as death!'
